Still Bopping Along

Things are going well - I'm stuck between 250-255 - just can't seem to break into the 240's and it's been 3 weeks now - I guess this is what they call a plateau and it's just annoying.

Loving the veggies - I'm still using a few HMR products in addition. I spent all last night cooking - either I was cooking breakfast things for the family to eat and nuke quickly in the mornings so my husband stops feeing my kid pop-tarts, I was also cooking dinner and preparing foods to eat on all week.
I made a huge pot of veggie stew - each serving is <50 calories, a large salad with mixed veggies to eat on all week and even a large cauliflower salad.
I love this because it's cauliflower mixed with a couple of veggies of choice, capers, a few olives for flavor and a 0 calorie dressing that I custom make... yummy - kind of like a Mediterranean salad, but healthy.

Since the weather is warning up, I've started walking during lunch in addition to my workouts - it's nice, clears my head and gets me out of the office. I think I'm starting to get into a pattern for my gym workouts and still have my volleyball twice a week to mix it up - Now I'm just ready to lose the next 50 pounds, if my body will just cooperate.

Can you share the recipe for your dressing for the cauliflower salad?

Sure -
Grey Pupon Honey Dijon Country Mustard
Red Wine Vinegar
Touch of light olive oil
Little bit of caper juice.

I don't measure anything, just mix until I get the flavor I like - for what ever reason the mustard and red wine vingar on cauliflower tastes great.
